- Blot the chicken and pork pieces with kitchen paper then cut up chicken and pork into 1 inch long pieces. Cut mushrooms.
- Sprinkle chicken and pork with salt and pepper then sprinkle chicken and pork with flour and shake off excess.
- Heat up large wok or large fry pan. When hot, add the oil, when its really hot and starts smoking, turn the heat to low, add chicken and pork and brown all sides.

- Drain off excess grease and add garlic whole, and stir for 2 mins..
- Add the rice wine, soy sauce and chicken stock. Turn heat down as low as possible, and braise for 20 mins.
- When the chicken, pork and garlic are cooked after 20 mins, remove the chicken and the rest with a slotted spoon, and place on a warmed platter. Sprinkle with chives and serve at once. Also small crispy roast potatoes goes well.
