Peel eggplant, chop up in little pieces. Add flour, cook until bottom of pot starts to brown. Add tomato sauce, eggplant and water. Poondu Kuzhambu is a very healthy, delicious, spicy, authentic and traditional kuzhambu of TamilNadu.
Instructions to make Garlic gravy:
- Heat 3tsbp oil, once it heated add fennel seeds and fenugreek seeds(don't burn it) cook with medium heat.
- Add garlic clove cook until it turns golden brown (color change slightly).
- Add finely chopped onion cook until it's soft.
- Tomato, coconut, cashew nuts add to blender make it paste.
- Add above paste into the pan mix well. Add required amount of salt.(cook it for 5mins)
- After 5min pour soaked tamarind water allow it to boil.
- Add 1glass of water. Cover with lid. Make it boil
- After it boil add little coriander leaves.
- When you're going serve at the time add little bit of Jaggery.
- Enjoy with white rice.you can eat with boiled egg.
