The ingredients needed to make Ginger Ale:
  1. Make ready 4 cup water
  2. Get 2 cup ginger, peeled and thinly sliced
  3. Make ready 1 tsp grated lemon zest
  4. Get 1 cup raw cane sugar/coconut sugar
  5. Take 1/4 tsp sea salt
  6. Prepare 1 handful mint leaves
  7. Get as needed lemon wedges
  8. Prepare to taste Sparkling water
  9. Prepare as needed Ice cubes
Instructions to make Ginger Ale:
  1. In a saucepan put ginger, lemon zest and water. Boil it on high heat for 5 minutes.
  2. Add sugar, simmer for 20 minutes or till the liquid reduces to 3 cups.
  3. When it is just warm add shredded mint leaves and sea salt. Leave it to cool down.
  4. Use a fine strainer to strain out all the solids.
  5. You can refrigerate this concentrated syrup in a glass bottle up to a week.
  6. When you want to use it mix 1/4th cup of the syrup with 3 parts of sparkling water/soda. Pour it over a few ice cubes in a glass.
  7. Throw in a lemon wedge and few mint leaves. Serve instantly.
